The vineyards thrive in alkaline, lime-rich soil, with vine ages ranging from 10 to 90 years. The winery employs integrated vineyard protection, ensuring a healthy ecosystem. The winemaking process takes place in the cellar, where the family minimizes intervention, allowing the wines to mature naturally. They utilize French oak barrels for aging and produce approximately 25,000 bottles of both sparkling and still wines each year. Their unique Qvevri wines, crafted using ancient Georgian methods, showcase the family’s dedication to exploring diverse winemaking techniques.
